Introduction

Very easy, great side dish Very easy, great side dish
Number of Servings: 8

Ingredients

    3 tbsp. Olive Oil
    1/4 Dijon mustard
    1 tbsp. white wine vinegar
    3/4 tsp kosher salt or to taste
    8 ears fresh corn
    4 tomatoes cut into 1/4 inch dice
    1 scallion thinly sliced
    1/4 cup chopped mixed herbs (basil, parsley, tarragon)



Directions

Pre heat grill to high.
grill corn, turning frequently until slightly charred all over 3-5 minutes.
cool corn slightly and remove kernels from the cob and transfer corn into a large bowl
add the tomatoes, scallion and chopped herbs to the corn
Toss, add the dressing, toss again and serve at room temperature
