Ingredients

    1 cup raw sugar
    1/2 cup (1 stick) butter
    1 egg
    1/2 cup applesauce
    1/2 cup ground flax seed
    1 1/2 - 2 cups whole grain flour (fresh ground, if possible)
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 teaspoon salt
    1/2 cup dry oatmeal
    1/2 cup crushed pecans
    1/2 cup crushed walnuts
    1/2 cup raisins
    1/2 cup dried cranberries
    12 oz package chocolate chips (I like Girrardelli)

Tips

Add flour in smaller amounts at a time.


Directions

Preheat oven to 350. Mix butter, applesauce, egg, sugar. Mix in ground flax seed. Add baking soda, baking powder and salt with flour and oatmeal, and fold into wet mixture. Now, add nuts, raisins and chocolate chips with a sprinkling of flour on top. Drop by spoonfuls onto greased cookie sheet. Bake for 10 - 15 minutes at 350.

Serving Size: Makes 2 - 4 dozen cookies, depending on size
