Ingredients

    10 oz uncooked orzo
    4 oz reduced fat feta cheese, crumbled
    2 medium tomatoes, chopped coarsely
    2 Tbs extra virgin olive oil
    juice of 1 lemon (about 2 Tbs)
    salt & pepper to taste
    1/3 cup Italian Flat Leaf parsley, roughly minced
    Kalamata olives, optional as garnish

Directions

Cook orzo al dente, and rinse in cold water. Let stand at room temperature 15-20 mins. Combine with remaining ingredients.
