Ingredients

    eggplant, unpeeled (#1 or #11/2)
    2 large yellow onions (cut in half sliced)
    3 or 4 zucchini(sliced)
    2 large Green Bell Peppers (seeded and cut into thin strips)
    2 large tomatoes(cut in 1/2" wedges)
    6 oz can of low sodium tomato paste
    1/2 cup extra light olive oil
    2 garlic cloves minced(or 1/4 tsp of garlic powder)
    tsp each of sugar, dried basil, black pepper, & oregano






Tips

serve over rice or couscous


Directions

1. put veggies in crock pot
2. then put tomato paste in
3. next add spices to the pot
4. drizzle with olive oil
5. cover and cook on low approx. 8 hours
