Ingredients

    I used Merchant Gourmet Authentic French Puy Lentils (Ready to Eat), 100 gram(s) but you could use dried and cook them first.
    I used 'Infinity foods' Organic fire roasted red peppers, 82 gram(s) but again you could roast your own pepper or use any jar-bought pepper. I used approximately a whole pepper. Chop roughly.
    Olive Oil, 1 tbsp.
    *Rice wine vinegar, 1 tbsp.
    Ginger Root, 6 grams - grated
    Lime Juice, 0.5 lime yields
    *Lime Zest, 1 tsp
    Garlic, 0.5 clove, crushed
    *Grainy mustard, 0.25 tbsp or half a teaspoon

Directions

Mix all of the ingredients in a bowl. Serve with chopped avocado and bit of crusty bread to mop up the vinaigrette.
