Ingredients

2 c. cooked whole-wheat orzo
12 grape tomatoes
1 medium zucchini
2 cups arugula
1 lemon, juice and rind
4 T. raw walnuts
2 T. fresh basil
2 garlic cloves
1/2 t. sea salt
Tips
Adding the arugula to the warm pasta will wilt it slightly, giving it a nice texture and bringing out it's flavor.
Directions
Cook orzo until done, about 9 minutes. Chop zucchini and arugula; slice grape tomatoes in half; mince basil and garlic; zest lemon. When orzo is done cooking, rinse and drain well. Add arugula to the warm pasta and toss. Then add the rest of the prepared vegetables and seasonings. Squeeze lemon juice over all and toss. Let rest for a little before eating.
