Ingredients

    2 cups mashed banana (about four large)
    1 egg
    1/4 cup skim milk
    1 tbsp canola oil
    2 cups whole wheat pastry flour
    1 tsp baking soda
    2 1/4 tsp baking powder
    1/4 tsp salt
    1/2 cup chocolate chips (optional, but are included in nutrition information)

Directions

Mix wet ingredients. In separate bowl, mix dry ingredients. Add wet to dry, stir until just mixed (no dry spots). Scoop evenly into muffin tins (12), bake at 350 F for 15 minutes.
