Ingredients

    2 T butter
    3/4 cup chopped white onion
    1/4 tsp. pepper
    4 cups broccoli florets and tender stems, chopped
    3 cups chicken broth
    2 tsp. fresh lemon juice
    1/2 cup heavy cream
    1/8 tsp. freshly grated nutmeg
    1/4 tsp. iodized sea salt

Tips

If using the blender to puree, be sure to process small amounts at a time to avoid burns from the hot liquid.


Directions

Melt the butter in a large saucepan over medium heat. Saute the onion and pepper for 3 minutes or until the onion softens.

Add the broccoli, broth, and lemon juice. Simmer, covered, for 20 minutes or until the broccoli is very tender.

Use a hand blender to puree the soup in the pot. Stir in the cream, nutmeg, and salt. Heat for 3 minutes or until hot.

Serving Size: Makes 4 approximately 1-cup servings
