Ingredients

    3 Turkey Italian Sausages, casings removed, hot or mild
    3 cups chopped cooked kale
    3 cups chopped cooked cabbage
    3 Tbsp Olive Oil
    2 Tbsp Butter
    1/4 cup AP flour
    2 cups milk (I used vanilla soy milk - 100 cal per cup)
    1/4 cup grated parmesan cheese

Directions

Heat olive oil and butter in a large saute pan over medium high heat. Add sausage, breaking it up into small piece. Brown and cook through. Add flour, coat sausage pieces completely to create a rue, cook for 1-2 minutes to remove flour taste. Add kale, cabbage, and milk. The sauce will thicken as it heats up -- keep an eye on it. If it gets too thick, add a little more milk. Top with grated parmesan cheese.
