Ingredients

1/2 cup (about 80g) dried pineapple
1.5 cups shredded coconut (unsweetened)
2 large egg whites
2 Tbsp Honey
Tips
I used raw coconut & raw local honey along with egg whites from my own backyard hens to make these a fairly healthy treat.
Directions
Preheat over to 325, line baking sheet with parchment paper.
Pulse dried pineapple in a food processor or chop finely with a knife. You want it in VERY small bits. It may get clumpy in the food processor, but that is fine.
whisk the egg whites until frothy and then whisk in the honey. Stir in the coconut and the pineapple and mix until well incorporated/distributed.
Use a small cookie scoop & pack mixture firmly into balls/scoops. Place on baking sheet parchment and bake for about 14 minutes until just turning golden brown. Cool completely and enjoy!
