Introduction
I make my own "refried" beans, without frying, and no fat. Soak the beans overnight, covered with water about 4 inches above the beans in a bowl. Ingredients
-
2 lbs dried pinto beans
1 TBS garlic powder
2 TBS chili powder
1 TBS ground cumin
1 tsp ground coriander
1/4 cup dried onion flakes
1 tsp salt
1 small can diced green chilies (mild)
Tips
Serve with grated cheese if desired. Not in the nutritional count.
Directions
Soak the beans overnight. If you forgot, put them in a pot and cover with water. Bring to a boil covered and remove from heat. Let set for an hour. Drain, then proceed as if you had soaked them overnight, but it may take more cooking time. Depends on how old the beans are, and you never really know!
Drain soaked beans, and rinse really well. Cover again with cold water. Add seasonings EXCEPT salt and green chilies. Bring to a boil uncovered. Then lower heat, and let simmer uncovered. I think this helps some of the gas escape, I stir often, and remove any foam or scum. Add water as needed, and once they start to get soft, be careful not to add too much water. I like it when the water is all absorbed, and they are really mushy. Then when totally tender, add the salt and green chilies.
