Introduction

We do beef & noodles, beef & rice, as well as beef & potatoes. This is beef & quinoa. The protein count is off the charts (41g) and you'll like that quinoa's protein balances its carb count, so your blood sugar won't spike & crash. Ingredients

    Brown 12 oz of 90% lean ground beef in a heavy pan. Add 1/4 cup diced onion, 1 tsp garlic (or more), 1 tsp parsley, 2 tsp oregano, 1/2 tsp dried red chili peppers (or more), and stir together. Add 3 C fresh mushrooms. Stir & break up pieces into bite size if necessary.

    Add 3/4 cup dry quinoa & 1 1/2 C water to pan. Stir again. Place lid on top and return to boil. Stir, reduce heat to simmer & replace lid. Cook until liquid is reduced & quinoa grains are clear. (You may need to remove lid to accomplish this.)

    Divide into 3 equal portions in bowls. Add cheese sprinkles (count the calories!) or eat plain. ENJOY!

Tips

You can cook the quinoa in a separate pan, but why mess up another dish? Give yourself a break in the kitchen sometimes & just make a one pan meal. It will all mix in your mouth! Let it mix in the pan too! Save a gallon of water!


Directions

Cook in heavy skillet with lid over medium heat. Brown onions & meat together. Add other ingredients and water. Bring to boil. Reduce heat to simmer until quinoa is clear (done).
