Number of Servings: 8

Ingredients

    1 cup uncooked Quinoa (cook per directions to yield 2 cups cooked)
    3 Tbls Extra Virgin Olive Oil
    2 Tbls White Wine Vinegar
    Juice from 1 lemon (or 3 Tbls)
    2-3 Green Onions, thinly sliced (Red onion can also be used for bolder flavor)
    1 can Black Beans, rinsed and drained
    1 can Chick Peas, rinsed and drained
    2 Tbls Diced Green Chilies
    4 oz Reduced Fat Feta
    Salt & Pepper to taste
    Add 2 cups Grape Tomatoes (halved) last to prevent bruising

Tips

**This is best made the day before serving.**


Directions

Cook Quinoa according to package and allow to cool. Add liquids to Quinoa, then mix with remaining ingredients. Refrigerate at least 8 hours before serving.
