Ingredients

    1 cup Rolled oats
    2 15.5oz cans black beans, rinsed and drained
    2 large eggs
    2tsp. Ground cumin
    1tsp kosher salt
    2oz finely grated pepper jack cheese (~1cup)
    3 cloves garlic, minced
    4 tbsp. fresh cilantro, chopped
    1 tbsp extra virgin olive oil

Tips

Serve on buns with avocado slices, peppers, and salsa!

Directions

Put oats in food processor or vitamix blender, roily chop.
Add one can of beans, rinsed and drained, mix to coarse paste. Add egg, cumin, salt, blend to mix well. Transfer mixture to large bowl. Add another can of beans, the cheese, garlic, and cilantro.
Slightly oil a plate and hands, form 8 burger patties, place on plate and refrigerate 10-15min.
Heat large skillet until HOT. Add oil and swirl to coat pan, cook burgers until brown and crusted (3min), flip and cook again. Flip again if needed. Burgers should be firm when pressed.
**alternately can bake on lightly oiled sheet at 350F for 12 min per side (24 min total).
