Ingredients

1.5 cups red or white onion, diced
1 medium green pepper, diced
1 medium sweet potato, grated
8 - 10 eggs
1 - 1.5 pounds of ground sausage (I used country sausage but in hindsight, I would opt for something with more flavor, like andouille or Italian)
Spices to taste - I used salt, pepper, garlic powder, and chili powder but I found it still a bit bland.
Tips
As I stated previously, I would liberally season, particularly with some spiciness. For future incarnations of this, I'll be using a heavy hand with crushed red pepper and probably diced jalapenos.
Directions
Chop all ingredients and toss in the crock pot, save for the eggs.
In a bowl, whisk the eggs into scrambled consistency, then pour over everything in the crock.
Mix everything together until well combined.
Cook for about 7 hours on low, to make sure the sausage is cooked thoroughly.
Serving Size: Makes about 6-8 servings
