Ingredients

4 medium to large Idaho potatoes
1/4 C cider vinegar
1 Tbls Olive Oil
4 slices low sodium bacon chopped
1 Tbls granulated sugar
Salt and pepper to taste
1/4 C chopped parsley
Tips
May also par boil potatoes for 4 minutes in large pot, over medium heat.
Directions
Preheat oven to 500* F.
Pierce potatoes with fork and microwave on high for 6 minutes. When ready, cut into 8 wedges each and sprinkle with vinegar.
In a large skillet, heat the olive oil, add the bacon and cook till crisp. Remove with a slotted spoon to paper towels and reserve. Toss the potatoes in the bacon drippings and season with sugar, salt and pepper.
Scatter on a baking sheet and roast, in preheated oven, until golden and crisp, about 20 minutes.
Transfer potatoes to a serving bowl and toss with the parsley and reserved bacon pieces.
