Ingredients

    1 lb ground, lean turkey
    1 lb ground, extra-lean beef
    1/2 vidalia onion, diced
    1 medium carrot, diced (I used baby carrots, probably 6 or 7)
    3 cloves of garlic, minced or 3 oz of the jarred kind
    1/4 cup Frank's buffalo sauce
    3 oz reduced-fat feta, crumbled or diced
    1tbsp smoked paprika
    2 eggs
    1/4 cup pecan meal

Tips

I like to do this with even beef to turkey ratio, but this can be done with all turkey or maybe even ground chicken. I've never really used the chicken though so I don't know if the texture would stay as firm. Also, make sure to check after 60 minutes for doneness and add 15 minutes if it isn't quite done. Internal temp should reach 185F just to be safe.


Directions

Preheat oven to 425F. Put together the broiler pan, adding enough water to cover the bottom (catches the grease and makes for easier cleanup!) Spray with olive oil or canola spray.
Place all the items into a big bowl and mix until the meats have blended and veggies and spices are throughout. Form into a log/meatloaf shape and gently roll out onto the broiler pan. Make sure it is the same height and thickness for even cooking
