16 oz lowfat cottage cheese (2 cups)
1 cup diced zucchini
1 cup diced mushrooms
pepper, onion powder, garlic powder
1 cup diced tomatoes
1/2 cup of fat-free feta
Tips
This recipe is adapted from Bonnie Pfeister's blog, pfit.
Directions
Chop all veggies and combine with the egg white, feta, and cottage cheese. Season to taste and pour into a muffin tin sprayed with cooking spray. Cook at 325 degrees for 45 minutes, or until brown and set.
