Introduction

Great, thick, tangy and easy thousand island dressing that will knock you socks off. Great, thick, tangy and easy thousand island dressing that will knock you socks off.
Number of Servings: 30

Ingredients

    1/2 medium green pepper
    1/2 medium red pepper
    1 medium onion
    2 hard boiled eggs, large
    3/4 c Trader Joe's low fat Mayo, no sugar
    2 tbs tomato paste
    1.5 tsp Gourmet Garden Chili Spice
    1 tbs red wine vinegar
    Salt and Pepper to taste after overnight chill

Directions

using a food processor, mince the peppers and onion on purse mode until small bits. Place into a dish towel and ring until moisture is gone. Place peeled eggs in bowl and pulse until finely chopped. Put egg and pepper/onion mixture in a mixing bowl. add remaining ingredients and gently stir to combine. If you want it thinner, add a bit more mayo. Chill overnight for best flavor. After over night chill, adjust seasoning to tase with salt and fresh crushed black pepper.

    Incredible!
    This gets better after it sits overnight and the flavors have time to blend. If you squeeze out the liquid well it will be just thin enough to spread throughout your salad greens and not runny. - 8/8/14
