Ingredients

    1 Cup Egg Whites
    3 large Eggs
    1/4 + 2 Tbsp of pico de gallo
    4 slices of low fat deli ham
    Salt and Pepper to taste
    1 tsp of baking soda
    1/4 cup of water (or milk or cream)

Directions

In a large bowl combine eggs and egg substitute with salt, pepper, water and baking soda. Finely cut the deli ham and combine it with the egg mixture, as well as the pico the gallo (mine did not have chili, just grated onion and tomatoes).
Evenly divide into 6 in a large muffin tin. Bake at 350 F for 20 minutes, or until the egg is completely set and puffed.

Serving Size: 6 Large muffins or 12 Mini Muffins
