Ingredients

    8 oz ground beef, 85%fat
    1.5 green bell pepper, diced
    1 medium onion, diced
    4 small carrots, diced
    1 cup chicken broth
    1 tsp chili powder
    1 tsp coriander
    1 tsp cumin
    1 tsp salt
    1 tsp black pepper
    sprinkle of red pepper flakes
    1 28 oz can whole peeled tomatoes
    1 15 oz can kidney beans, drained and rinsed
    1 can corn, drained

Tips

Tastes even better the next day. Serve with cheese, sour cream, salsa, tortilla chips and jalapeno slices.


Directions

Saute ground beef with carrots, onion and green pepper. When veggies are soft and meat is brown add spices. Toast slightly til spices are fragrant. Deglaze with 1 cup broth. Add 28 oz can of whole tomatoes. Bring to simmer. Add kidney beans and corn and simmer for about 40 minutes to bring flavors together. Let sit for about half an hour and warm to serve.

Serving Size: Makes 4 hearty servings
