Ingredients

    Boneless skinless chicken breasts ( 1 per person 5 oz.)
    2-3 Tablespoons chunky salsa of your choice per chicken breast
    taco seasoning of your choice ( I use salt free)
    1/2 oz. low fat grated mexican cheese blend per breast
    low fat sour cream ( optional)

Directions

Sprinkle taco seasoning on both sides of chicken. Place in appropriate size baking pan that has been sprayed with cooking spray. Top each breast with the salsa. Cover and bake at 350 for about 30 min or until done. Uncover, sprinkle with cheese and return to the oven just long enough to melt the cheese. Top with low fat sour cream if desired and serve.

    Very Good
    I really liked this dish. It is now one of my favorites. I didn't have taco seasoning and just used my own mix of it. - 11/2/08
