Ingredients

1-1/2 tbsp. olive oil
2 c. chopped carrots
2 onions, chopped
4 cloves garlic, minced
2 c. chopped tomatoes, fresh
2 c. chopped zucchini or yellow squash
1/3 c. fresh basil, torn (or 2 Tbsp. dried)
salt & pepper to taste
oregano, thyme, or other herbs, if desired
2 c. low-fat or fat free chicken or veggie stock
3/4 c. water
2/3 c. elbow pasta
2 tbsp. tomato paste
Tips
This is very good served with some Italian style shredded cheeses on top, and garlic toast or French bread on the side.
Directions
Heat oil in a soup pot; add carrots, onions, and garlic. Sautee for about 5 minutes, stirring often.
Add remaining vegetables, any desired seasonings, stock, and water. Stir to combine. Bring to a boil, and allow to cook about 3 minutes.
Add pasta and allow to boil until it reaches desired doneness (7-9 minutes for me). Remove from heat. Stir in tomato paste until soup is of uniform consistency.
Serving Size: 8 servings, about 1.5 c. each
