    1.5 cups whole wheat flour
    1 tsp. baking soda
    1 tsp. ground cinnamon
    .5 tsp. ground ginger
    .5 tsp. salt
    8 TBSP. Brummel & Brown yogurt spread
    .5 cup Splenda
    1 large egg
    1 tsp. pure vanilla extract
    1 cup unsweetened applesauce
    .75 cup grated carrots


You can add .5 cup golden raisins to the dry ingredients of this recipe. This adds 22 calories per muffin.


Preheat oven to 350 degrees. Line 12 cup muffin tin with paper or foil liners. Sift together flour, baking soda, cinnamon, ginger, and salt. In a large bowl, beat together yogurt spread and Splenda until creamy. Beat in egg and vanilla. Combine with dry ingredients. Fold in applesauce and grated carrots. Divide the batter evenly among the muffin cups. Bake for 22 minutes.
