Ingredients

2 ts olive oil
1/2 cup chopped onion
1 ts green curry paste
1 pear
1-1/4 cup pumpkin puree
1 can chicken or vegetable broth
2/3 cup Trader Joe's coconut cream
1/2 cup water
salt and pepper to taste
Tips
I use a handheld blender to puree soup. The calories are based on the Trader Joe's brand of coconut cream.
Directions
Saute onion in oil in a soup pot until tender. Add curry paste and saute 1 minute. Add pear and broth, bring to a boil and simmer until the pear is soft. Add the remaining ingredients. Bring to a boil. Puree. Adjust seasoning.
