Ingredients

    3 T. fresh lemon juice
    1 T. red wine vinegar
    1/4 tsp. dry oregano
    1 garlic clove smashed into a paste
    Salt and Pepper
    1/4 c. olive oil
    1 cup uncooked quoina
    2 cups red and yellow grape tomatoes
    1 c. pitted kalamata olives, sliced
    2 green onions, thinly sliced
    2 pickled cherry peppers diced
    1 small red onion, thinly sliced
    1/2 English cucumber, diced small
    Feta for sprinkling

Tips

Good with a tablespoon of feta cheese when served. Feta cheese not incorporated into calorie count.


Directions

Whisk together Lemon juice, vinegar, oregano. Add salt and pepper to taste. Slowly drizzle in olive oil and whisk to emulsify.
Rinse quoina in a strainer. Combine quoina and two cups of water in a sauce pan and bring to a boil. Simmer for 15 minutes until water is all absorbed. fluff with a fork and add dressing and chopped vegetables. Chill and serve.
