Introduction

I was trying to come up with a shredded chicken to use in burritos. However, this came out more like a stew or chili. Still tastes fantastic! I was trying to come up with a shredded chicken to use in burritos. However, this came out more like a stew or chili. Still tastes fantastic!

Ingredients

    5 large skinless thighs
    1 (15 oz) can tomatoes with green chilies
    1 (14 oz) can tomato sauce
    1 cup medium salsa
    1/2 cup sliced jalapenos (optional)
    1 Tbsp chili powder
    1 tsp ground cumin
    1 tsp garlic powder
    1 tsp oregano
    1 (28-oz) can black beans, drained and rinsed

Directions

Mix all ingrediets except beans in a crockpot. Cook on low 6-8 hours. Remove chicken and shred with two forks. Return chicken to crockpot, add beans and heat through. This is like a thick stew or chili.

    It was delicious, i think i will put more chiles next time, and more tomato sauce. The chicken soaked up a lot of the liquid. - 5/19/08

    I added extra cumin and put in some corn and put over a cup of steamed cabbage with cilantro garnish. Was delicious! - 9/25/16
