Ingredients

1 Can Baby White Corn
1 Can Pinto Beans
1 Can Black Eyed Peas (optional)
1 Can Black Beans
1 Small Can Green Chiles
1 Small Jar Pimentos
Finely Dice:
1 Medium Vadalia Onion
1 large Green & Red Bell Pepper
1 Large Pablano Pepper
2 Small Jalepeno Peppers
1 Tablespoon Fresh Finely Chopped Cilantro
1/2 Cup Apple Cider Vinegar
4 Cloves Roasted Garlic
1/4 Cup Extra Virgin Olive Oil
1/2 Cup Granulated Sugar
1 Medium Avacado (Diced)
1 Bag Tostitos Cantina Thin & Crispy Chips
Tips
1. This can be stored for up to 2 months in the fridge, but do not put the Avacado in it. Only when serving.
2. The longer it sits the better it tastes
Directions
Drain all of the canned/jar items. Then add them to a large mixing bowl, with the yummy veggies, and cilantro.
To make the dressing, stir the vinegar, olive oil, sugar, and garlic together in a pan. Bring to a boil, then remove from heat, and cool. Pour dressing over the mixture and toss to mix evenly. Then add the Avacado and mix gently.
Refrigerate for at least 1 hour.
Enjoy!
