Ingredients

    2 Eggs
    1 Stick of butter, softened
    3/4 C Brown Sugar
    3 Over-ripe bananas
    2 C sifted flour
    2 tsp baking powder
    1 tsp baking soda
    1-2 tsp cinnamon
    1 tsp pure vanilla extract
    .5 C Milk (lowfat)

    Nuts (optional, i sometimes do a brown sugar/nuts mix and just crumble it on top)
    chocolate chips (optional)

Tips

Add-ins that i use:
Shredded coconut w/white chocolate chips
Shredded coconut w/semi sweet chocolate chips
Brown sugar/nuts crumble topping


Directions

Preheat oven to 350 degrees. Cream together softened butter & sugar, add eggs & vanilla, mix until creamy. Add bananas one at a time, add all dry ingredients, alternating with the milk until everything is blended well. You can fold in any optional toppings you want. Bake in a 9x5 loaf pan for about an hour, or in mini loaf pans for 30-35 minutes or until fork comes clean.
