Introduction

Adapting to make it sugar- and fat-free. Love me some banana bread! Adapting to make it sugar- and fat-free. Love me some banana bread!
Number of Servings: 36

Ingredients

    2/3 c Splenda (or equivalency of other sweetener)
    1/2c Egg Substitute
    4 medium bananas, mashed (the more speckled, the better!)
    1-3/4c flour
    1-1/2t baking powder
    1-1/2t baking soda
    1/2c walnuts, chopped

Directions

Mix wet ingredients, then stir in dry ingredients. Divide between 36 miniature muffin tin cups that have been sprayed with Pam.

Bake in a 350F preheated oven for 18-25 minutes or until lightly browned and top springs back when touched.
