Ingredients

2 Cans of light red kidney beans
    1 lb lean ground beef
1 teaspoon ( or to taste) minced garlic
    1 medium-large onion
    3 stalks of Celery
    2 Green bell peppers
    1 can Stewed Tomatoes
    1 can diced tomatoes
    Chili Seasoning to taste
1 4oz can of chopped green chiles (more if want spicier)
added about a cup of water

Tips

You could save some more fat and make with ground turkey (I usually do just happened to have gotten ground beef out of the freezer)

Directions

Brown meat w/ onion and garlic. Chop celery and bell peppers and add everything to crockpot. Cook on low for at least 6 hours ( I usually do at least 8). Sometimes I will make with 1 can of black beans and add corn for more of a southwest feel. This is the first time I tried stewed tomatoes. They didn't have rotel when I was at the store and decided to improvise.
