Introduction

Ingredients

    1 onion, chopped
    1 16 oz. can black beans
    1 16 oz. can kidney beans
    1 16 oz. can corn (drained)
    1 8 oz. can tomato sauce
    2 14.5 oz cans diced tomatoes w/chilies
    1 1.25 oz packet taco seasoning
    2 boneless skinless chicken breasts

Directions

Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving remove chicken and shred. Return chicken to slow cooker and stir in. This is good eaten with cheese, sour cream, or tortilla chips.

    Amazing. My boyfriend literally licked his bowl clean. ANd there is soo much you can do with it...eat it as soup with tortilla chips, in a tortilla shell, over rice or pasta, in a salad, dip veggies in it...sooo good! - 3/29/10

    Great flavor with the taco seasoning. I used one more can of corn, and a large jar of salsa instead of the can of tomato sauce and insead of the two cans of diced tomatoes. I also added 2 cups whtie rice and 4 cups of water. Husband loved this. Oh, and no onions because I used the salsa. - 9/6/10

    This was a great crock pot recipe! I only had dried black beans, so I soaked them overnight before adding them. I didn't have taco seasoning, but I know how to season Mexican food, so I did that myself. This is very tasty, and I'm glad I made it! - 2/22/10

    I made this recipe and just fell in love with it..The ingredients were all something I had on hand..it was easy assemble..the only change I made was ..I didn't use a crock pot to make it. I assembled all ingredients..and cooked the chicken previous to the assemblage..so just heating all ingredients. - 3/19/10

    I have made this a few times in the past (I think I randomly found it in a google search) and its amazing! the recipe I had though called for pinto beans as well, 1 chicken breasts instead of 2, & no onion.     Wonderful/easy Chicken Tacos-30 oz can of pinto beans replace black beans. All liquid drained frm cans of beans/Corn less soupy for flour torillas with lettuce and cheese. I also added more chicken breast . Used Chicken taco seasoning (2 pkg) Plan to use the left overs on baked potatoes later. - 10/30/09

    Great dish! I cooked the onion in a little olive oil in a cast iron pot then added cubed leftover grilled chicken breasts, and the remaining ingredients and heated to bubbling hot. Served with sour cream, shredded cheddar, and baked tortillas - delicious. - 9/27/09

    Very good! Easy to make but a little spicy for my kids. I'll only use one 14.5 oz diced tomatoes with chilies and 1 14.5 can of plain diced tomatoes next time. Eat over rice with a touch of fat free sour cream - yum! - 5/15/09

    My family and I love this.. I altered the recipe a bit.. we have different products and can sizes where I live, and I use more chicken. Instead of this being a stew we thicken it and use lettuce leaves and wraps for dipping or scooping...it's fantastic..a family favorite. - 4/7/09

    I added an extra can of black beans, and because I only bought 1 can of tomatoes with chilies I added one whole tomato, and a squeeze of lemon. This is such a fulfilling meal!
