Ingredients

1 Cup Oat Fiber
2 tsp glucomannan
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
1/2 tsp pumpkin pie spice
1/2 cup Swanson Whey Protein (vanilla)
1/2 cup Xylitol
1/2 cup Erythritol + couple shakes of stevia
1/2 cup liquid egg whites
1/2 tsp maple extract
1 tsp vanilla extract
1 cup pumpkin puree (no additives - pure pumpkin)
2 TBLS melted refined coconut oil
Tips
The cookies are small, but very filling for a treat since they are filled with lots of fiber and glucomannan.
Directions
Mix all ingredients together well. Bake at 350 for 15 to 18 minutes. Press cookies flat after removing from the oven & enjoy this low-carb treat!
