Introduction

Easy decedent duck, try using a less fatty breed like Muscovy. Most stores sell the fatty version of the Pekin. This recipe calories/fat is based on Pekin, but we raise and use our own Muscovy ducks so its a bit leaner. Either way, this is simple and ready when you get home from work. Ingredients

    Whole Duck, 6 servings (listed on here 1/2 duck is 3 servings) this is approximently a 5lb roasting duck.
    Orange juice, not from concentrate 8 oz
    Navel Orange - medium/ large orange pieces
    Apple, Gala or fiji cut in half seeds removed
    1/2 cup onion chopped
    Kosher Salt, 1 tsp
    Pepper, black, 1 tsp

Tips

I skin the duck before the crockpot. Makes it less greasy!


Directions

Rub duck down with salt and pepper first.

Place chopped veggie/fruit in crockpot place duck on top and pour juice over it. Turn crockpot on low and let cook for 7-8 hours. 30 minutes before eating remove lid and turn up heat to reduce sauce in slow cooker.

If you want to use sauce on duck or some rice on the side, just strain out the cooked fruit bits.
