    16 oz diced ham
    9 large eggs
    1 cup Mexican cheese
    1 diced green pepper
    1 diced red pepper
    1/3 cup chopped green onions (about 6 stalks)
    3 cups sweet potato hashbrowns (1 large potato)

Directions

9x13 in pan, 25 min at 350F, add cheese after about 10-15 min to the top.
