Ingredients
-
1 can 12oz Contadina Tomato Paste (nuttin' but tomatoes in ingredient list)
1 can Bush's Black Beans Reduced Sodium (rinsed)
1 packet Mrs Dash Taco Seasoning
1 packet Concord Foods Classic Ranch Dip
Jennie-O Ground Turkey Breast 99% Fat Free
2 Green Bell Peppers
1 Red Bell Pepper
1 Yellow Bell Pepper
1 Orange Bell Pepper
1 bunch of kale
1 head cabbage
1 tbsp olive oil
Water to fill good sized stock pot, leaving room to stir :)
Directions
Chop & Sweat the peppers in olive oil
Add then brown the ground turkey -- seasonings to your tastes - I used lots of cumin, coriander, tumeric, oregano, pepper, paprika
Mix in Ranch and Taco seasoning packets, add water, stir and let sit a few minutes.
Prep large stock pot. Pour mixture into stock pot. Add more water, beans and remainder of ingredients and enough water to cover all ingredients. Add more seasonings to taste... rosemary, cilantro, cardamom, lemongrass - whatever you like, spice it up!
Bring heat up, then simmer on low to med-low heat for at least an hour. The longer it simmers, the better it is!
