Ingredients

1 large egg
1/2 cup egg substitute (or egg whites from carton)
1/2 cup Kraft Original Barbecue Sauce (or similar)
1/2 cup each chopped onions and bell peppers
2 lbs. extra lean ground beef
1/2 cup Quaker Oats, "Quick 1-minute"
2 pounds ground beef
Directions
Preheat oven to 350 degrees farenheit
In large bowl, beat your whole egg, and add egg white and barbecue sauce until well-mixed. Fold in peppers, onions and ground beef. Then, fold in the oatmeal--but don't mix it too long, now! If you mix the oatmeal in too much, or let it sit too long before putting it into the oven, you'll get a sticky, gooey, glutinous mess.
Scoop your mixture evenly into a muffin tin, the kind that makes 6 large muffins. (Use non-stick cooking spray on the tins, if necessary)
Bake 40 minutes, or until a toothpick comes out clean.
Let them cool on a rack for a few minutes before taking them out.
