Number of Servings: 12

Ingredients

    2 large sweet potato, peeled and cubed
    1/4 cup olive oil
    2 Tbsp red wine vinegar 9instead of cider vinegar)
    1 Tbsp Splenda brown sugar mix
    1 1/2 Tsp Thyme
    2 stalks celery, diced
    2 green onions, sliced
    1 cup shredded carrots
    1 cup been sprouts
    1 cup pecan pieces, roughly chopped

Directions

Boil sweet potato cubes for 5 minutes (until fork tender), drain and allow to cool. Whisk olive oil, vinegar, brown sugar and thyme together to make dressing. Toss celery, onions, carrots, sprouts and pecans together with the dressing. Add potato cubes, toss lightly.

    Made this a while back and wasn't wild about the flavor. Ended up tossing half of it, which made me feel wasteful, but it went bad b/c I didn't want to eat it. - 12/7/09
