Ingredients

    1 lb chicken breast
    1 lb long grain & wild rice blend, dry
    2 cup carrots, sliced
    2 cup onion, chopped
    2 cup celery, diced
    4 cup chicken broth 99% fat free
    2 cup water
    3 T lemon juice
    1 T oregano
    1 T red pepper flakes
    1 T ginger, fresh ground
    1 t black pepper, fresh ground
    1 t cayenne pepper
    1 t basil
    1 t cumin


Tips

Serve with sour cream and slivered green onion, if desired.


Directions

Cube chicken.
Mix water and lemon juice in a 5 quart slow cooker.
Add remaining ingredients except peas.
Cook on low 6-8 hours.
Add peas.
Cook additional 15 minutes.

Serving Size: makes eight 2-cup servings
