Ingredients

    3 medium ripe bananas, mashed
    2 cups water
    1.5 cups pineapple (frozen & thawed or fresh)
    3 cups oats
    6 tbsp ground flaxseed
    0.5 cup unsweetened shredded coconut

Tips

Refrigerate or freeze leftover portions. Microwave in the morning for hot, fresh oatmeal.


Directions

Preheat oven to 350. Grease a jumbo six-muffin tin. Combine all ingredients in a large bowl. Portion into muffin tin and bake for 25 minutes.
