Ingredients

    1 large can of V8 juice, you can use low sodium, I use regular off brand
    1 lb of lean ground turkey
    1 tbs of EVOO extra virgin olive oil
    6 tbs of beef broth base
    6 cups of hot water
    1 large bag of frozen mixed vegetables, I use the corn, green beans, carrots and peas blend

Tips

It's great alone or served over hot cornbread.


Directions

Brown turkey meat in olive oil. Add the large can of V8 and 6 cups of water, bring to a boil. Add the 6 tablespoons of beef broth base and stir. Once combined add in your bag of frozen soup vegetables, with or without okra. Let it cook about 30 minutes on a medium-low heat, keep it bubbling but not boiling over.
