Introduction

Left over chicken turn into a Mexican fiesta! Left over chicken turn into a Mexican fiesta!

Ingredients

    300 gr Chicken Breast - no skin diced and cooked
    1 Large onion - chopped
    1.5 Large Bell Pepper - chopped
    1 Can Black Beans (drained and rinsed)
    1 Bag rainbow slaw
    1 Can (12 oz) Yellow corn (drained and rinsed)
    6 tbsp. hot bbq sauce (or mole sauce)
    10 Large Casa Mendosa Whole Wheat Tortillas
    1 Cup Cheddar cheese grated

    For Salsa:
    1 Can Diced Tomatoes
    1 Large Onion (diced)
    1 Large bell pepper (diced)
    1 tbsp. Salsa epicure spices
    1 tbsp. Hot cocoa (St-Augustine)



Tips

Serve garnished with sour cream and guacamole (not in calculation) and a side dish of rice (optional - not in calculation).


Directions

1. Sauté the pepper and onion until tender, about 5-7 minutes
2.Add the Rainbow slaw. Sauté more...
3. Add the hot sauce to the mix.
4. Drain the black beans and corn. Set aside.
5. Add the chicken, beans and corn to the veggies.
6. Divide onto the tortillas. Roll. place into a baking dish.
7. Cover with the cheese and bake in the oven (350F) for 20 min.

5. During that time, make the salsa: Sauté for 2 min the onion and add the pepper and tomatoes. Add the spice and bring to a boil to reduce. Set aside.
8. Pour some salsa over the burritos and serve immediately.
