This recipe is perfect if you need a quick lunch, easy to cook. It consists in a fat-free variation of the clasical French "chicken Basquaise".Number of Servings: 1
Ingredients
-
You need :
- 1 raw chicken breast (around 125g)
- 1 small tomato
- 1 bell pepper (yellow, orange or red are tastier than green)
- 1 cup of cooked pasta
- some species : paprika, Espelette pepper (or Cayenne one), salt, ...
Tips
You can change the pasta for wheat grains, rice or gluten-free pasta, as you wish ! (I chose wheat for my pic)
Directions
Rince the bell pepper and the tomato, and slice both into strips.
Take the chicken breast and remove the fat if there is some. You may dice it if you prefer.
In a frying pan, pour water to recover 1-2cm, and heat it.
When the water boils, add the sliced bell pepper and tomato.
(heat your cooked pasta if not done yet)
Stir them during 2minutes approximately, then add 1/2 cup water. When it boils once again, add the chicken breast (in once piece or diced, as you wish).
Stir until the chicken is entirely boiled (about 5 to 8 minutes, it depends on the thickness).
Add as some species as you like (for me, it's paprika and Espelette pepper).
In a plate, add the boiled chicken with its vegetables and the remaining flavoured water with your hot cooked pasta, and season if needed.
Serving Size: Makes one 1-plate serving
