Ingredients

    16 oz spicy pork or venison sausage
    Medium onion chopped
    4 cloves minced garlic
    1 cup sliced celery
    2 diced sweet bell peppers, different colors
    14 oz can diced tomatoes, undrained
    4 cups Swanson organic vegetable broth
    1/2 cup brown rice
    1 small head green cabbage chopped
    1 Tbsp chili powder
    1/2 tsp salt
    1 tsp paprika
    1/2 tsp cumin
    1/8 tsp cayenne pepper
    1/8 tsp black pepper
    (optional) 12 oz bag medium shrimp, cooked, thawed and tails removed (adds 40 calories per serving)

Directions

In large pot cook sausage with onion and garlic until brown. Stir in bell peppers and celery; cook and stir 3 minutes longer. Add all remaining ingredients and bring to a boil. Cover, reduce heat to low and cook (stirring occasionally) until rice is tender, about 40 - 50 minutes.
