Ingredients

1 cup lentils
1 cup red lentils
1 cup pearled barley
4 cups Swanson Thai Ginger Flavor Infused Broth
2-4 cups water
1 red, yellow, or orange bell pepper, chopped
1 can Red Gold Petite Diced Tomatoes w/ Lime Juice & Cilantro
2 Portobella Caps, cubed (to replace the beef in the stew)

Tips
Serve with warm crusty bread, plain greek yogurt as topping, enjoy.
Directions
Combine all ingredients in slow cooker / crockpot, turn to low, cover with lid.
Let cook for 4 to 6 hours on High or 8 to 10 hours on Low, then check for doneness.
You may have to add extra water as the lentils and barley will absorb a lot of liquid.
Add parsley in last 15 minutes of cooking.
