Introduction

Using a scone pan or silicon scone cups, you can create little pie shaped unsweetened pumpkin puddings. Ingredients

    Pumpkin-Libby's 100% Pure Pumpkin 3 1/2 cups
    Vanilla extract, imitation, alcohol, 1 tbsp
    Coconut extract, 1 tbsp
    Nutmeg, ground, 1 tsp
    Cinnamon, ground, 2 tsp
    Cloves, ground, 1 tsp
    Egg, fresh, whole, raw, 2 large
    Redi-Whip Whipped Cream, 4 tbsp

Tips

If sharing with guests, do warn them that it is not sweet. If desired, servings can be sprinkled with artificial sweetener; however, the whipped cream on top provides a hint of sweet that may be sufficient for some.

While this is relatively low in net carbs, it's certainly a bit of an indulgence. It's not exactly pumpkin pie, but it provides a bit of the experience without the added sugar.


Directions

Mix all ingredients well. Pour into silicon scone baking cups or scone pan (or cupcake cups and a cupcake pan). Bake for 15 minutes @ 425.

Serve with a small portion of whipped cream on each serving.
