Ingredients

    Green beans (Fresh)
    Baby bella mushrooms - I used 6 good-sized ones
    Bacon - 4 slices
    Cheddar cheese - a small handful
    Cream of mushroom soup - 2 8-oz(?) cans
    French's fried onions - 1 container

    Optional- chicken broth for boiling green beans

Tips

After topping with the onions, you can put back in the oven for another 5 minutes or so to crisp them. I set my bake temp at 450 for this, simply because I had a salmon in by then. You could probably set broiler to low and accomplish the same effect.


Directions

Remove ends from green beans, snap in half and rinse. Boil green beans for 20 minutes. I used a mix of chicken broth & water.

Slice (or cube) then sautee mushrooms.

Microwave bacon, blot grease, tear or cut into pieces. If you like more fully cooked bacon, crumbling works too.

Combine green beans, mushrooms, cheese, bacon and cream of mushroom soup in bowl and stir to mix.

Spread into 2 qt casserole dish, cook for 25 minutes at 325 degrees. Remove from oven. Top with French's fried onions.
