Ingredients

    5 cups old fashioned oats
    2 cups chopped walnuts

    1/4 cup olive oil
    1/4 cup butter, melted
    1/3 cup maple syrup
    1/3 cup brown sugar, lightly packed
    1 tsp ground cinnamon
    1/2 tsp salt
    4 tsp vanilla

    2 cup dried cranberries (craisins)

Tips

I use the precut Reynolds single cookie baking sheets of parchment from Walmart, so easy, and they lay flat.


Directions

Preheat oven to 300 degrees Fahrenheit.
Cover bottom of large sheet pan with parchment paper.
In large bowl, whisk together olive oil, melted butter, maple syrup, brown sugar, cinnamon, salt, and vanilla.
Stir in oats and walnuts until well coated.
Spread in sheet pan covered with parchment paper.
Press down gently with potato masher until even.
Bake 45 minutes, rotating half way through, should be starting to brown.
Cool completely.
Crumble into a large container, stir in craisins.
