Introduction

Ingredients

    4 TB butter
    1/4 cup A/P flour
    1 quart homemade turkey stock (from one leg and one thigh)

    Rendered meat from stock

    salt & pepper, seasonings of choice to taste

    1/2 cup milk (recipe uses whole but lesser or water is fine)
    2 TB A/P flour.

Tips

This could also be made with the rendered turkey drippings. If the amount of turkey fat was kept the same as the butter calories would be about the same.


Directions

brown flour in butter for about a minute. Slowing whisk in stock a bit at a time, stirring into a smooth paste each time until it thins and becomes saucy-smooth. Simmer for 10 minutes, stirring often. Add turkey & adjust seasoning till it's where you like it.

Additional milk and flour may be added to thicken if needed. Simmer an additional 10 minutes
