Ingredients

    1/3 cup all-purpose flour
    1/4 tsp. salt
    1/4 tsp. black pepper
    4 boneless, skinless chicken breast (about 1 lb.)
    3 Tbsp. I Can't Believe It's Not Butter or Brummel & Brown yogurt spread, divided
    1/2 cup chicken broth
    4 thin slices lemon

Directions

In shallow bowl, combine flour, salt, pepper. Dip chicken in flour mixture, coating well.

In 12-inch skillet, melt 2 tablespoons of I Can't Believe It's Not Butter or Brummel & Brown yogurt spread. Spread over medium heat and cook chicken in two batches until chicken is thoroughly cooked, turning once. Remove chicken to serving platter and keep warm.

In same skillet, add broth and lemon slices. Bring to a boil over high heat, scraping up brown bits from bottom of pan. Stir in remaining 1 tablespoon of I Can't Believe It's Not Butter or Brummel & Brown yogurt spread. Spread until melted. Pour sauce over chicken and garnish with parsley, if desired.

    It was pretty decent. Didn't care for some of the ingredients, especially the lemons. Just wasn't my thing. - 5/4/08
